Creamy Spaghetti Carbonara (With a Twist)

This version uses a small amount of cream for an extra rich and creamy texture.

Ingredients:

  • 12 oz spaghetti
  • 4 oz pancetta or bacon, diced
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • Salt and freshly ground black pepper
  • 2 tbsp parsley, chopped (optional)

Instructions:

  1. Cook the Pasta: Boil the spaghetti in salted water until al dente, and reserve 1/2 cup of the pasta water.
  2. Cook Pancetta: Sauté pancetta in a skillet until crispy. Add garlic and cook for another 1-2 minutes.
  3. Mix Eggs, Cream, and Cheese: In a bowl, whisk together eggs, cream, and Parmesan.
  4. Combine: Drain the pasta and add to the skillet with pancetta. Toss well. Remove from heat and stir in the egg mixture, adding a little pasta water if needed for a creamier sauce.
  5. Serve: Season with salt, pepper, and sprinkle with parsley. Enjoy warm!
