A comforting dish made with creamy Alfredo sauce, shredded chicken, and layers of cheesy goodness.
Ingredients:
- 9 lasagna noodles
- 3 cups cooked, shredded chicken (rotisserie works well)
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 3 cups Alfredo sauce (store-bought or homemade)
- 1 egg
- 2 cups spinach (optional)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Cook Lasagna Noodles: Boil the noodles according to the package instructions until al dente. Drain and set aside.
- Make Ricotta Mixture: In a bowl, combine ricotta cheese, egg, 1 cup mozzarella, 1/2 cup Parmesan, salt, and pepper. Mix well.
- Assemble Lasagna: Spread a thin layer of Alfredo sauce in the bottom of a greased baking dish. Add a layer of lasagna noodles. Spread a portion of the ricotta mixture, followed by shredded chicken and spinach (if using). Drizzle Alfredo sauce on top. Repeat layers until all ingredients are used, finishing with a layer of noodles and sauce.
- Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese on top.
- Bake: Cover with foil and bake at 375°F for 25-30 minutes. Remove foil and bake an additional 10 minutes until the top is golden and bubbly.
- Garnish and Serve: Let the lasagna cool for a few minutes, then garnish with fresh parsley before serving.
