Creamy Spaghetti Carbonara (With a Twist)
This version uses a small amount of cream for an extra rich and creamy texture.
Ingredients:
- 12 oz spaghetti
- 4 oz pancetta or bacon, diced
- 2 large eggs
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 garlic cloves, minced
- Salt and freshly ground black pepper
- 2 tbsp parsley, chopped (optional)
Instructions:
- Cook the Pasta: Boil the spaghetti in salted water until al dente, and reserve 1/2 cup of the pasta water.
- Cook Pancetta: Sauté pancetta in a skillet until crispy. Add garlic and cook for another 1-2 minutes.
- Mix Eggs, Cream, and Cheese: In a bowl, whisk together eggs, cream, and Parmesan.
- Combine: Drain the pasta and add to the skillet with pancetta. Toss well. Remove from heat and stir in the egg mixture, adding a little pasta water if needed for a creamier sauce.
- Serve: Season with salt, pepper, and sprinkle with parsley. Enjoy warm!
